唐代煎茶的兴盛离不开陆羽《茶经》,这部首部系统茶学专著制定了标准流程,其步骤严谨,尽显对茶的敬畏:
The prosperity of tea decoction in the Tang Dynasty was inseparable from Lu Yu's "The Classic of Tea". As the first systematic monograph on tea science, it formulated standard procedures with rigorous steps, fully demonstrating reverence for tea:
1. 备茶:茶饼炙烤冷却后敲碎,碾磨成细茶末,筛去粗渣备用。
Tea Preparation: Roast the tea cake, let it cool, crush it, grind it into fine tea powder, and sieve out the coarse residue for later use.
2. 煮水:风炉架茶鍑,分三沸:一沸加盐调味,二沸舀水备用、投茶末煎煮,三沸倒回备水“救沸育华”,催出茶汤精华“沫饽”。
Water Boiling: Place a tea cauldron on a wind stove and boil the water in three stages: add salt to season at the first boil (when small bubbles like fish eyes appear), ladle out some water for later use and add tea powder to decoct at the second boil (when bubbles like gushing springs form), pour back the reserved water to "calm the boil and nurture the froth" at the third boil (when the water boils vigorously), stimulating the essence of the tea soup - "foam".
3. 分茶:将茶汤均匀舀入茶碗,保证“沫饽”均匀,趁热饮用。
Tea Serving: Evenly ladle the tea soup into tea bowls, ensuring the "foam" is evenly distributed, and drink while it's hot.
一套完整的煎茶雅事,除了严谨的步骤,精致的茶具亦是不可或缺的点睛之笔。唐代煎茶的雅致,也深深体现在这套独具特色的茶具体系之中。
For a complete elegant tea decoction ritual, besides rigorous steps, exquisite tea sets are also an indispensable finishing touch. The elegance of tea decoction in the Tang Dynasty is also deeply reflected in this unique tea set system.

唐代茶具呈“北白南青”格局,陆羽推崇越窑青瓷,《茶经》记载28种专用器具,构成完整茶具体系。
The tea sets of the Tang Dynasty presented a pattern of "white porcelain in the north and celadon in the south". Lu Yu admired celadon from the Yue Kiln, and "The Classic of Tea" recorded 28 types of special utensils, forming a complete tea set system.
